For those asking… Rubbed a 3.6lb Chuck roast with taco seasoning of choice Smoked at 250 on a rack above a pan filled with 5 cups beef bone broth, 3 dried New Mexico chiles, a small can of chipotles in adobo sauce, and 2 serranos with a quartered Vidalia onions and a whole head of smashed garlic When the meat reaches 165 take it off the rack and finish it in the broth until it probes like butter Rest and shred… adding some of the broth for extra moisture and flavor Dip tortillas in broth and grill and fill with meat, cheese, and whatever else you like… I used avocado crema and mango salsa which beautifully offset the spice of the peppers
