Homemade Salad Dressing Recipe:
1 cup mayo
salt and pepper to taste
1-2 cloves garlic, grated
juice of 1 lemon
1 heaping tablespoon dill
1 tablespoon olive oil
1 tablespoon maple syrup (or sugar or honey)
3/4 cup parmesan cheese
1/4 cup feta
(or 1 cup of all parm)

This is one of my favorite salads of all time. And what I love most about this is just how versatile it is. You can keep this really simple and just use lettuce, tomatoes, and cucumbers. Serve it up alongside your weekn night dinners. Or you could really ramp this up with a bunch of your favorite ingredients. And this is a winner to bring to a party or to serve for company. But let me tell you what really sends this crispy, crunchy, fresh salad over the top is this homemade creamy dressing. It’s cheesy. It’s garlicky. It has dill and fresh lemon juice. Get your pen and paper out. You’re going to want to write this one down or just commit it to memory, my friends, because this is a dressing that you are going to be wanting to make all the time. To get started, I’m adding garlic to my bowl. For the first time since last July, I am using not my homegrown garlic, but store-bought garlic because I finally went through all of my homegrown garlic. So, I did not make it through a year’s worth, but I did come close. I have videos on my garlic planting and garlic harvesting if you’re interested in growing your own garlic. And here’s just a quick peek of what this year’s garlic is looking like. And the day of this filming is May 30th. You plant garlic in the fall and it has to winter over. And this is what it looks like at this time of year. It is the most fun growing your own garlic and it’s super easy. I cannot say enough about it. I will try to remember to include those videos down below in the description box. I also have a garden playlist that includes all of my gardening tours and videos, planting, harvesting, and you will find the garlic videos there as well. Next, we need to add one cup of mayo. I’m using this brand. I got this from Costco. Use whatever kind of mayo you like, store-bought or you could make your own from scratch as well. I get a lot of comments about the kinds of mayo that I use and how bad it is. Let me know what you think. In your opinion, what is the best store-bought mayo to use as far as ingredients go? I know homemade would be the best, of course, but if you had to buy a mayo, what brand do you recommend? Please comment down below. It’s a big point of contention in my videos. Okay, in goes our cup of mayo. This makes a lot of dressing. So, you’ll have leftover and it stays in the refrigerator for a good amount of time. So, I do like to make this quantity because I can keep it in the refrigerator and use it throughout the week in salads and as a dip as well. I like to dip chicken and things like that in here. Next, I’m adding in some salt, pepper, as much or as little as you like. I like a lot of pepper. We need the juice of a small lemon. Next, we need dill. I rarely have fresh dill on hand, so I always have this dehydrated dill, which I love. A drizzle of olive oil, which I just got on my sweater. Drizzle of maple syrup. And you certainly could use more of that if you want it a little bit sweeter. And last come the cheeses. This is freshly grated Parmesan cheese. About 3/4 of a cup. I have used in previous videos the cheese in the green container. I use both. It just kind of depends what I have on hand or what my husband picks up at Costco. This is 1/4 cup of feta. If you don’t like feta or you don’t have it, just use all parmesan cheese and do one cup of parm. And that is it. Look at this. It is the most incredible dressing. And it just gets better over time as it sits in your fridge and all these flavors come together. But look at this. Oh, and then if this was not the consistency that you like, you could add more lemon juice to thin it out even more. To me, this is really good. I have made it thicker on occasion, but I’m happy with this. Before I put my whole salad together, let’s make sure it’s good. perfection. I wouldn’t change a thing about it. I love it just the way it is today. But you can certainly adjust it once you taste test it and see if you want it a little thicker or adjust the lemon juice ratio depending on how you like the taste of it. It’s very customizable, but these ingredients make an incredible, incredible, my very favorite. I’m obsessed with this salad dressing. Let’s get this all tossed together and give it a final taste test. And add some grilled chicken to this. And you’ve got yourself an entire meal. perfection every time.   1. I know homemade is best but we don’t use a lot of mayo so I just go with Hellman’s. I’ve used the Chosen brand. It’s ok but not my family’s favorite. Since we eat mostly organic, I feel a little store bought is not going to kill us at this point.

  4. Sir Kensington organic mayonnaise, classic. I haven't opened the Avocado option yet. Produced in Canada. Readily available in the U.S. This salad is a keeper!
