The bag of six avocados at Costco (Canada) has gone from $6 to $8 to $14 in just a few months. Market price makes sense.

I don’t see the problem so long as you have the actual price where it can be seen. Write it on a chalkboard out front or something. Put it on a daily special board.
There’s enough pricing uncertainty mango mussolini is bringing to Mexican and central America produce nowadays I can’t really blame them for going MP on guac on the printed menu, just be open about the actual price elsewhere.

I’m about ready to do this for tomatoes. Over $100 a box at the moment. More expensive than the avocados.
I saw this recently for the first time ever. I assumed the restaurant was anticipating volatile avocado prices due to immigration policies and tariffs.

There are some great points in here, and valid reasons on both sides.
But I would like to throw my 2 cents in.
You get x cases per week of most items, so if they are blowing through 4 cases of guac they should know the price. The fact that prices can go up at any moment makes little sense to me, as you got the items in at x,y,z. And almost every item you buy(unless you contract) has the chance of going up or down. There was a time when beef(ribeye especially) was going from 13.49lb to 16.49lb depending what day I ordered it that week.
I don’t think it’s practical to have MP for this product as the price should really be within 1-2 dollars each order made. And you could just charge x amount and make the cost 20%ish to cover on those high times.
