16oz fresh salmon (8oz minced, 8oz rough chopped into small bite-sized pieces
1/4 cup greek yogurt
2 tsp sumac
1tsp cumin powder
1tsp coriander powder
1tsp salt, black pepper, and red pepper flakes
2-3 fresh press garlic cloves
1/2 to 1 zest of lime
2 tblsp finely chopped green onion
2 tblsp finely fresh Italian parsley
3 pitas cut in half
These salmon are aras are a fun twist to the Middle Eastern classic beef or lamb stuffed pizzas. They are delicious and packed with flavor as the traditional aras. Perfect for any snack or meal. Let me show you how quick and easy they are to make. Oh, and they might be a little bit healthier, but don’t quote me. So, what I like to do is cut the salmon in half and mince one half down to look like this. And give the other half of the salmon a rough chop to small bite-sized pieces to look like this. Add the salmon to the bowl along with Greek yogurt as the binder. Season with sumac, cumin, coriander, salt, pepper, and red pepper flakes. Zest of one lime. No need to add the juice. Fresh pressed garlic. Finely chopped green onions, the green and the white part. And finally, chopped fresh parsley. All right, so far so good. Mix all the ingredients together until well incorporated. Let set in the refrigerator for at least two to three hours so all the ingredients can get to know one another. Hey, how you doing? How you doing? When ready, cut your pas in half and start stuffing in your salmon mixture. I like to give it a mediumsized stuff. Hey, what? In a heated pan with a little oil, add your aras face down first and give it a nice sear. Now, you can lay them down on their sides and continue to cook for about 3 to 4 minutes each side. Since we are cooking salmon, it shouldn’t take that long. By then, you should have a nice golden brown on each side of your pa.
