Eshkeneh – the easiest Persian soup ever!
This is a super simple and tasty soup with just a few ingredients. It’s called Eshkeneh, and it’s one of the most traditional Persian dishes. All you need is some onion, turmeric, fenugreek leaves, flour, eggs, and a few basic things. It’s delicious with bread, pickles, or even fresh herbs. Anyone can make it—quick, easy, and tasty!
How to make it:
First, chop some onions and fry them in oil until they get soft.
Add some wheat flour and fry it with the onions for a minute or two.
Then add turmeric, black pepper, and dried fenugreek leaves. Keep frying for a bit so it smells amazing.
Pour in boiling water, stir, and put the lid on. Let it cook for a few minutes.
Add some chopped potatoes and let them cook until soft.
At the end, crack in the eggs. You can leave them whole or stir them in—your choice.
