Meant to include this too. For the seasoning, I do coarse salt, whole peppercorns, and dried rosemary and thyme in a mortar and pestle until it’s fine enough to rub into the meat. I know adding pepper before the sear is debated among some professional chefs as they think it burns, but I’m a pepper fiend.

I love pepper too so tend to just do it. The garlic is a fun and intense thing. For dinner! But for breakfast you must have strong stomach. And a girlfriend ?
