I prefer raw grated beets so would marinate them in the dressing for a few hours before assembling the salad.

In Armenia we have special type of beets that get pickled with their long stems and garlic. We call it ճխթթու and the best of it is made in Goris. It’s probably my favorite thing in the world. I can eat the entire jar + the garlic and then drink the juice it’s that good.
