Decided to forgo putting the bowls together and then letting the ingredients sit over the next 5 days to turn into slop. So in the morning before work I’ll just add everything into another meal prep container so it’ll all be fresh!! Not pictured are the other toppings I’ll add day-of: spicy pico de gallo, guacamole, sour cream, a Mexican blend of cheese, a mix of lettuce/cilantro, and tortilla chips. I took a LOT of creative liberties with all of these recipes below since I didn’t have some of the correct ingredients + wanted to substitute for things that better suited my taste).

    I cut in May and part of June. All I see in that photo is rice.

  4. I make a variation of this for nearly every meal prep! This week I did Mexican rice, fajita veggies, guac and pico for toppings.
