Greek Lemon Rice is pure comfort for me–it reminds me of both Greek home cooking and the cozy Greek restaurant sides I loved growing up. I still make it all the time, but with a healthy twist: I use brown rice for extra fiber and a delicious nutty bite.🥰

Greek Lemon Rice & Orzo Pilaf

Ingredients:

1 cup brown rice (long grain or basmati)

½ cup orzo pasta

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 teaspoon sea salt

2 ½ cups hot water or vegetable broth

Zest and juice of 1 large lemon

¼ cup chopped fresh dill

¼ cup chopped fresh parsley

Freshly ground black pepper, to taste

Instructions:

Heat the olive oil in a medium pot over medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic and cook for 1 minute.

Add the orzo and brown rice. Stir to coat in the oil and toast lightly for 2-3 minutes.

Add the hot water or broth and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 35-40 minutes, or until the rice is tender and the liquid is absorbed.

Remove from heat. Stir in the lemon zest, lemon juice, dill, and parsley. Season with black pepper to taste.

Fluff with a fork and serve warm.
