I just bought some anchovies in brine…. my plan was to make a pizza like this and take photos… and enjoy them, because I love them!

Yum! My recipe :
Anchovy Kimchi Pizza :
Pizza crust of choice (I cheat and use Stone Fire thin crust or Trader Joe’s)
Anchovies
Cheese of choice
Kimchi (Love Costcos fresh Jongga brand)
Shiitake mushrooms and veggies to taste (optional)
Pizza Sauce :
Large tomato paste
Splash rice vinegar
2-3 tbsp Gochujang (depends on amount of heat wanted)
Prepare pizza sauce. If using homemade crust, cook. Premade crust I cook without topping 375 3-4 minutes. Add toppings and bake 5-6 minutes. Enjoy!

I had a roommate in college; first time out of the dorms, we rented the top apartment in a split-up house.
About 3 months in, when it was time to get something to eat, he suggested maybe pizza. I cautiously said, ~”Pizza might be good.”
He then sort of looked at the floor, and said, ~”Umm, it’s time to ask you a question.”
Me, hoping: “…yeeeeah?”
Him: “Do you like … anchovies?”

I love anchovies on pizza. I grew up with my father loving anchovies on his pizza so our pizza’s always had anchovies and now that my father has long since passed away. I have the urge once in a while and it’s so difficult to find a place that puts anchovies on pizza. Yes, I could make my own, but I’m 65 years old I don’t wanna make my own pizza! I think there’s like one or two places that we put anchovies on, but I do always have cans of anchovies so I can put them on at home, but I sometimes forget. But it brings back very fond memories of my father.
