    Ive seen them throat half a 16oz steak in the 5 steps from the floor to the BOH.

    Some dive bars have something similar. There’s always that regular that will drink the leftovers. Usually a random line cook. Years ago, my buddy used to clean up.

    Glad I’m a cook, where “I accidentally made the order wrong” can turn into “I guess this is my mid-service snack now”. 😛 I only do it with untouched dishes though, and luckily it doesn’t happen often.

  9. Terrible idea? Absolutely.

    Have I been so hungry that I’ve eaten seemingly untouched slices from a customers dine in pizza? Absolutely.

    Hunger is powerful. It sucks to be food insecure enough to eat leftovers like this.

    Alternative “The Rat”: they plate up whatever they’ve got that’s most convenient for the kitchen.

    A couple months ago I straight yoinked half a ribeye off a plate right as the server was about to dump it in the trash. Teenage dishie said to me “you can’t do that!” and I replied “I sure can!” I’m a proud graduate of Raccoon School.
