I never wrap my meat either. My son and I have (we think) perfected our rub. We just set it in the smoker and let it do it’s magic. I like the lazy way.

That’s the easy way if you have a pellet smoker. But if you have to keep feeding sticks for the last 3 hours just to maintain temp I would argue it’s much easier to just wrap it and put it in the oven. I switched over to finishing long cooks in the oven a few years ago The flavors are identical but the PITA fctor is only a fraction.

That’s how I do it man! 12 hours overnight, check the temp and wrap to seal in juices till dinner. If I have to bump the heat up to hit internal temps.
