Smoked Cheese Recipe: Step-by-Step Guide for Beginners

Ingredients:
* 8 ounce block Colby Jack Cheese
* 8 ounce black Sharp Cheddar Cheese
* 8 ounce block Monterey Jack Cheese
* 8 ounce block White Cheddar Cheese
* Various cured meats, condiments, crackers that you enjoy
Directions
* Place all your cheese on a wire cooking rack
* Fill up a deep dish with ice
* Place the cheese on top of the ice tray
* Fill up a smoker tube with smoking pellets for this recipe i used cherry pellets
* Light the smoker tube
* Place the smoker tube on one side of your grill or smoker
* Place your cheese and ice tray on the opposite side of the smoker or grill
* Smoke for 1 hour
* After 1 hour remove the cheese from your smoker or grill and place in the refrigerator for 1 hour
* After 1 hour whip any excess oil from the cheese with a paper towel
* Vacuum seal all your cheeses and place in the refrigerator for 7 days. If you don't have a vacuum sealer you can use zip lock bags just make sure you remove all the air.
* Take all your cured meats out of the packaging.
* For my board i am using salami, pepperoni, prosciutto, grapes and green olives
* Slice your cheese into desired thickness
* Assemble your charcuterie board as you please remember there are no rules to this make your board the way you want!
