All right, y’all. It’s your Big Bear here. Now, we’re in Cozy’s kitchen and I’m thinking about doing up some pasta salad. Now, I’m going to use up my low carb carb damn rotini to do this up and I’m thinking I’m going to do up some sort of pesto. I got this jar of sundried tomatoes. I thought I could mix it up with this pesto. Do some sundried tomato pesto. Mix it up with this pasta salad. You want to stick around? I’ll show you how we do it. I was tiptoeing through the Publix the other day hunting for BOOS when I saw them there in all their glory. Yep, half off carpet deal noodles. So, I cleaned them out. These things are half the carbs and they’re low calorie and they taste just like regular noodles, if not better. There ain’t much we can do to flavor the actual noodle. However, one option we do have is to season the liquid we boil. You can use broth or I use my pink Himalayan sea salt and I went heavy. Let’s get started on that pesto. I grabbed a big old handful of fresh basil. And then I cleaned up some garlic. Now, I drained this jar of sundried tomatoes. And then I threw a whole block of parmesan reano in there. Since we’re not heating this up, it’s going to retain the flavor of this olive oil. So, I’m going to use my fancy stuff. And I’m going to go in with about a/4 cup. Now, grab the lid and put it tight cuz we’re going to put it on that food processor. Cut that sucker on and let her go. Wanting something smooth. It should end up looking something about like that right eye. I think we giving them noodles enough time to drip dry. I’m going to throw them in a big old bucket. Then we going to introduce that pesto we just made. Now I completely forgot to add my lemon zest. However, while y’all weren’t looking, I toasted me up some pine nut. This will make your kitchen smell gorgeous and add a little crunch to your salad. Now, I grab these mozzarella pearls cuz we double cheese things around here. Our noodles already got the salt, so we’re going to make sure to add some fresh cracked black pepper. And then we going to get everything well incorporated and let everybody get to know each other. You want that sauce to enase every crack and crevice that rotini has to off. Lay bun. Look that. I’m going to holler and sweet along. Get in here and give us a taste. All right.
