I received this big hunk of beef as a gift from my cousin about 6 months ago. I immediately put in the freezer and today I have started to thaw it out in hopes of cutting it into steaks. The thing is I’m not sure if its a cut that needs to be cooked low and slow or if it is worthy of cutting into steaks and grilling.

    You may be surprised to find several slabs in there. Could be ball tips, excellent for pot roast. Not so much for steak.

    I work at a stockyards facility, Angus is a high choice (equal to a prime )
    You have a Top sirloin as previously posted remove the cap slice and enjoy

  5. Do some trimming on it and cook the whole thing low and slow. You can then use it for so many different meals.
