

Sunday dinner had a South American vibe.
We started with a cool, zesty ceviche: shrimp and bay scallops marinated in lime juice with jalapeño, onion, tomato, avocado, and cilantro.
Then a warm plate of brown rice, black beans simmered with garlic, onion, and cumin, roasted poblano and yellow peppers, and fresh avocado slices.
Light, bold flavors, and so satisfying…
