





A few meals I've eaten lately.
1) a roast veg bruschetta thing – roasted capsicum, onion, pumpkin, zucchini and garlic mashed, on crusty sourdough. With basil and feta. And salt and pepper tofu (pan fried with rice flour coating). This was so good, although next time I'll be less thorough with my masher.
2) shakshuka with added grated veg – zucchini and carrot. Also added cannellini beans. yum.
3) grilled hoki with a canellini bean salad . I added olives and cucumber.
4) salad from dish 3, leftovers
5) fresh strawberries from a local farm. And raspberries.
6) loaded sweet potato – avocado, tomato, capsicum, corn, red onion, lime etc.
