  1. French style omelette doesn’t get flipped, just roll it when the liquid stops running off to the sides when pulled. I think it’s better than country style that gets too much brown.

    The old British chef I used to work with who was a terrible alcoholic used to get irate about America’s apparent inability to cook a correct omelette. He’d come into the kitchen after doing several shots of Jager yelling “WHAT THE FUCK IS A FRITTATA ANYWAY? ITS JUST A FUCKED UP OMELETTE!!!”

    I can always make an omelette when I’m using a flat top but when I’m home it’s always a damn scramble.
