hey everyone it’s Rachel from sugar maple Farmhouse and today we’re going to make french onion [Music] chicken so French Anya chicken is one of the most popular recipes on my website it is so good and I’ve been making this for a few years now our family just loves it if you are a fan of french onion soup this is kind of just like french onion soup but with chicken in it and we’re going to serve it over some mashed potatoes with a side of green beans so it’ll be a full complete Meal instead of just a soup let’s get started and I’ll show you how I make it all right so the first thing we’re going to do is season the chicken and in this recipe I use chicken th boneless skinless chicken THS the reason I do that is because I prefer a dark meat chicken because it’s a little more flavorful but you can use breasts if you want to if you do go that route though just make sure that you thin them out with a a mallet and pound them out so that they’re all about the same size so I have my boneless skinless chicken thighs here and I already have my seasoning mixed up this is some coarse sea salt fresh black pepper dried oregano dried thyme and some parsley and we’re just going to sprinkle this on on to the chicken but first we’re going to add a little olive oil so you want to add about a tablespoon of olive oil I actually have extra chicken here that I’m using today so my olive oil is going to be a little bit more and I’ve got a little bit more seasoning too don’t be afraid to use your hands I know some people are weird about kind of touching chicken but you really want to make sure that the chicken is all covered and then we are going to use the seasoning and just sprinkle that over everything and again you really want to make make sure it’s covered so make sure you’re getting it on both sides I will flip my chicken around a little bit and flip it over really just make sure I get some of that seasoning mix on to all of the chicken so that we can get all of that flavor in there all right I’m going to go wash my hands so then we can move on to the next part all right now that all the chicken is seasoned I’m going to add a little bit of the extra virgin olive oil to My Pan here and then I’m going to get this thing going and get it heated while this is starting up too I have got a pot for my mashed potatoes that is a pot of salted water back here I’m going to turn that on and get that water boiling for the potatoes once your oil has started heating up you can go ahead and add the chicken to the pan so the chicken is going to cook 2 minutes per side if you are going to use chicken breasts you want to go 3 minutes per side once the time is up on the first side of your chicken flip it it over and cook it for 2 minutes on the next side so my thighs are done cooking for now you can see that they are still a little pink that’s okay you’re going to be finishing these off in the oven but you don’t want to cook them too much on the stove top before they go into the oven just give them a nice little bit of sear once the thighs are done you do want to cover them with some foil and just keep that heat in because the onions are going to take a little bit to cook all right so I’m going to add some more extra virgin olive oil to the pan I’ve turned my heat to low I will probably leave it between low and medium for cooking the onions the onions are going to cook for 20 minutes so they’re going to cook for 15 by themselves then I’m going to add some shallots and garlic they’re going to cook for another five and you’re going to be stirring constantly when you make french onion soup you actually cook the onions down for 40 to 45 minutes sitting there stirring constantly so that’s part of the reason why it’s so good because the onions get so beautifully caramelized but in this case you don’t need to work for 40 minutes to fully get them cooked down because cuz we’re also going to put this in the oven we’re actually going to add the shallots in now too those can cook right on up with the onions the idea with the constant stirring is that you want the onions to get tender and caramelized but you don’t actually want them to kind of brown up and get that kind of like crustiness that they sometimes get when they can sear a little bit which is also why I cook this between low and medium so that the onions don’t cook too fast her pot is boiling back there for the potatoes so I’m going to go put them in really fast so I can get back to my onions so the potatoes that I’m using for this recipe today for the mashed potatoes are a golden potato and I took the skin off you can really use whatever kind of potato you want my family likes the skin off I like it on but I took it off for them today I also really like golden potatoes I think that they just have so much more flavor so you can use whatever you want but that is what I am boiling up today and those will need about 15 or 20 minutes until they are ready to be drained and then mashed all right so I am at the halfway point with the onions now and here is what they look like you can see that their color has really changed they’re starting to get that nice caramel color and they have become a little limp too some of the ones from the outside of the onion aren’t just limp as some of the ones that were near the interior of the onion but you can see that everything is moving along really really nicely okay time is up and here is what the onions look like now so you can see they already have a really nice caramelization on them going now that the onions have been cooking for 15 minutes I’m going to add in the garlic and the butter so this is grated garlic and that goes in and just gives it that beautiful garlic flavor and then the butter is going to help further caramelize everything down you want to cook this all together then about another five minutes the butter will melt on you before that but that’s okay just keep going and caramelizing everything a little further so the 20 minutes are now up and here is what the onion mix looks like the next step is going to be deglazing the pan with some white wine so we are going to scrape the bottom to De glaze the pan and get all of that good flavor that was kind of sitting on there from the chicken from the butter from the onions up off of the pan and I’m going to let the white wine reduced down by about 2/3 and then put in some beef stock now that the white wine has reduced down the beef stock is going in and I’m going to turn my heat down to a simmer so that all those flavors have some time to mingle together while I grab my potatoes for the potatoes I’m now going to add butter and milk put that milk in there first and now the butter these are just a very basic potato that I’m making that is going to go underneath this recipe so it’s nothing kind of crazy I have a really great um sour cream mashed potato on the website but again this is just a basic one and I’ll include this in the French onion chicken recipe on the website with the potatoes mash them until you feel content and if you want to use a hand blender to do this you can do that too with the potatoes season them to taste so remember that you are seasoning an entire bag of potatoes so I will usually start with two two teaspoons of sea salt and I use coarse sea salt but you can start with one and see how it goes and then you do have to taste as you go so if you are making this for not your immediate family just keep that in mind grab an extra spoon so that you’re not not kind of putting an extra couple spoons so you’re not putting the same spoon back in again and again I however going to do that because it’s just my family today and they all have my germs think I’d like to add a little Pepper too maybe another half a teaspoon of [Music] salt maybe another sprinkle of salt the next ingredient we are going to add to the French onion chicken is Worster sauce I always say the name of that wrong so this is going to go right in and we’re going to mix it in there now that the potatoes are done I’m going to turn this back up to a little bit more higher than higher than a simmer but not quite medium either just so we can get everything kind of cooking together then the last thing I’m going to add in in terms of big ingredients is going to be some bullon so this is a paste you don’t have to use this if you don’t want to I don’t typically use this in my recipes but the first time I made this I made it with this and I don’t want to really go back and change it and kind of see if I like it better without it and kind of miss out on having a dish that I know I really love so it’s up to you if you want to use that or not um but I always use it in this recipe and then the very last thing that we’re going to add to this before you put the chicken back in is some fresh time so before we put the chicken back in I’m going to taste this just to see if it needs anything else before we add this into the oven with the chicken I think we’re good all those flavors are coming together in a really lovely way I’m going to let this simmer for maybe another two to three minutes while I kind of pick up here and then um we’ll put the chicken back in okay let’s put the chicken back in once all the chicken is in go ahead and add any of the juice from the plate as well just to get all that flavor in there and then you want to spoon the sauce over the chicken now I’m going to cover this and then put it in the oven for about 15 to 20 minutes while the chicken is in the oven I’m going to grate up some Grier cheese which is going to go on top of this just like it would a french onion soup okay the chicken is done so for the final step we are going to just add the cheese to the top of this and then cover it back up to melt the cheese oh my gosh it’s smells amazing it smells just like french onion soup I’m going to put some on top of each piece of chicken and then you can serve this with more too if you want this is just such an amazing amazing recipe okay I’m going to give that just a few minutes to melt the cheese meanwhile here’s the delicious golden mashed potatoes okay that should do it beautiful smells amazing looks so good the last thing I’m going to do is top it with some parsley some chives and a little bit more th so you guys know this sauce does come out thin it is not meant to be a thick sauce if you want to thicken it you can remove the chicken and try to take out as many of the onions as you can and then make a slurry with corn starch and some water put the pan back over the stove heat it for a few minutes and put that slurry in there and kind of whisk it all together it should thicken it up really nicely for you in terms of the amount that you want to use maybe I’d start with a tablespoon of corn starch you don’t want to go too much because then it’ll be too thick but we eat this just like soup so and let add some pepper and here it is all finished it is just a gorgeous mix of beautiful flavors that gives you a delicious family dinner now you can serve this on a plate or in a bowl we usually like to use a shallow bowl like this at least for Kevin and I the kids still like everything pretty separate and compartmentalized but Kevin and I will have the mashed potatoes the chicken right on top of the each other and then the green beans on the side here it
