
Call me crazy, this is not your typical breakfast, but here we are, eating this colorful bowl at noon: mixed greens, quinoa, yellow bell pepper, cucumber, tomato, cannellini beans, strawberries, walnuts, olives, and shallots. All drizzled with a dressing of lemon juice, olive oil, garlic, and mustard. The strawberries might seem like an odd choice, but I was aiming for a MIND diet–friendly plate (that's a Mediterranean Diet focusing on brain health).
