There’s marbling, but with chutoro it’s a subjective sliding scale. It could be that what they received was generally leaner and this is what best fit the bill, but you’ll definitely also see fattier and less sinewy chutoro. Might be yellowfin which is generally leaner

Looks like they got a leaner fish, common in the summer, I believe they get fattier towards winter when the water is colder.
You can still see the glistening of oils that I wouldn’t call this Akami, that should be more of a deeper ruby color.

If this is chutoro this is the saddest one ive ever seen. Even conveyor belt sushi places has better chutoro for about 200 yen a plate (1pc)
