I had decided to go sous vide so when I was at Costco a couple of weeks ago I got two round roasts, then vacuum-sealed them using a plastic straw into two silicon bags. Now my immersion heater has arrived and I'd like to cook them but I realized I don't know what kind of round they are, having thrown away their plastic wrapping. Photos attached in case anybody can recognize what they are from their shape.

This is a single roast. In the first picture the fat is on the right, in the second it's at the top.

I also have a couple more questions. Now that it's frozen I see all too clearly that my vacuum sealing has left something to be desired. Should I re-do it, with the equipment that will be arriving tommorrow, or will this come out okay as is?

Also, I haven't seen a recipe for cooking from frozen. How much of a difference in temperature/time would that require?

This will be my first time. Thanks for any help you can give to this very uncertain newbie.
