    Those would be masago, the roe of the capelin fish. Fun little bursts of flavor.

    That is Masago or Smelt roe. At my sushi restaurant we mix it into the spicy tuna to give it more of a salty and sweet taste.

    For all the folks guessing:

    “Tobiko and masago are small fish eggs often used interchangeably in Japanese cuisine, but they come from separate fish species and are subtly different in color, size, and texture.”

    So, these could be either, but they are fantastic regardless.
