*Okay, okay. You know I have to give you the ingredient list. I really want you to try this, because it’s that good!*

INGREDIENTS
2 lbs (80/20) ground beef (you can sub with pork for a traditional and authentic chorizo)
8 to 10 dried guajillo chiles
3 dried bay leaves
4 cloves of garlic
1 tsp dried Mexican oregano
2 Β½ tsp fine salt
1/2 cup distilled white or apple cider vinegar
1/2 cup soaking liquid from chiles
2 to 3 whole cloves (or 1/4 tsp ground clove)
2 allspice berries (ground)
1 tsp ground cumin
2 tsp paprika
2 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 tsp crushed red pepper flakes (optional)

Im so glad you have a chorizo recipe. I love chorizo and used to buy those cheap tubes of chorizo until i read the ingredients and was disgusted by the type of meat that was used.
Your chorizo looks really good, and over the years of cheating out on the store versions that ended up a nasty pile of grease that so I thought chorizo was nasty and I hated even tasting it, when a friend actually brought me a good chorizo (Yours looked just like that) I really like and look forward eating it when I can. I can't find a quality chorizo anywhere. The store chorizo is made with lymph nodes and salivary glands, yuck. I'm definitely going to get quality pork or beef and try this! Thanks for sharing!

Only guajillos? I make mine with a mix of guajillos, anchos, and pasillas. Maybe a couple of chiles de arbol for a little zing too.
