🍪 HALVA, DARK CHOC & SESAME COOKIES 🍪

This is my contribution to the perfect cookie discourse, for me they need to be really well balanced between sweet and savoury, and the perfect ingredient for that is halva.
I first came across halva in baking when I tried Violet Bakery’s legendary halva & tahini brownies – blew my mind honestly.
In this cookie I whip some halva into the dough along with a fat chunk in the middle of the cookie.
I love an oatmeal cookie moment, but don’t want any dried fruit, so I’ve blended oats into a flour in this cookie along with a handful of whole oats for texture.
I spent WEEKS testing and retesting this recipe for the book and it is one of the sweet recipes I am the most proud of.
