I loosely followed this recipe. Highly recommend, I didn't use avocado because mine were still too hard and I used spinach over kale. The jalapeno really made this! I used Dave's Killer Bread but recommend using a nice sourdough or summat
Used Violife cheddar slices, Violife Colby Jack shreds, Gotham Greens vegan pesto (will probably make my own next time), and added extra pickled jalapeno slices

This looks super delicious. If you’re into wild grilled cheeses you should try rebels Gruyère/brie (it doesn’t really taste like Brie more like soft, creamy mozzarella), with caramelized leeks and mushrooms deglazed in Marsala wine. A little salt and parsley on the bread 🤌
