Sourdough is too hard for me to maintain. So i perfected instant yeast bread.

    Have you tried using a pre-ferment with instant yeast such as a poolish or biga? You get some of the sourdough flavour without managing a wild starter.

    Me too, i don’t want to deal with a starter. It’s easier to make a poolish and it results in a great-tasting bread.

    312g water, 2g instant yeast, 6g salt, 390g flour. Mix to shaggy dough → 2h room temp rise (or 3x stretch & fold) → fridge 18-72h → pre-shape, rest 45min → shape, into banneton → 45min cold proof → bake 250°C covered 25min + 220°C uncovered 20min.

    It’s such a pretty loaf of bread! I’ve never cold fermented a dough, usually I decide when I wake up that I want bread with dinner and that just isn’t enough time. I lack the personality to plan wanting to eat bread out to two days from now lol
