Kumamoto style tonkotsu is great in general, very garlic. Though there’s so many amazing small shops everywhere that there is no one best style. Many of the decent sized cities and areas have their own style of rame. There’s this little shop around the corner from the family farm in Oita that made amazing Oita style tonkotsu but sadly the ojisan chef stopped making it because it was a lot of work.

Tonkotsu is my go-to but lately Iβve been finding myself going down the Tantanmen route. I love how itβs like a fusion between dan dan noodles and spicy ramen broth. Itβs definitely a guilty pleasure.
