~45 cal mini cheesecakes! 7g protein, 2g fiber each!

I am a huge fan of making really small desserts to have alongside fruit plates, and I’ve made this recipe quite a few times in the past few weeks! Not gonna claim that they are a perfect cheesecake dupe, but I do think they taste pretty good for being basically just Greek yogurt and egg whites lol.

crust:
– [ ] 1 cup of catalina crunch cinnamon toast cereal
– [ ] 1/4 cup egg whites
– [ ] 1/8 cup cane sugar substitute (i used truvia)

  • [ ] Pulse the Catalina crunch into a powder
  • [ ] in bowl, combine Catalina crunch with egg whites and cake sugar
  • [ ] bake for a couple min at 350 (forgot to time I’m sorry)
  • [ ] I used a standard size 12 muffin pan, and I was able to fill 10 of them

cheesecake filling:
– [ ] 1 cup of plain nonfat greek yogurt
– [ ] 1/4 cup egg whites
– [ ] 1 tablespoon of torani sugar free syrup, i used salted caramel
– [ ] 1/2 scoop of protein powder (i used vanilla)
– [ ] splash vanilla extract

  • [ ] mix all together well, top the baked crust, bake for about 10 min at 350
  • [ ] let cool in fridge
