I was lucky enough to dine twice at Oncore by Clare Smyth (three Chef Hats) earlier this year and got to try both the seasonal and classic menu (unfortunately while I still have the menu somewhere in my stash, I don’t have a picture and it has since been updated on their website).
The dining experience at Oncore is on par with what you’d expect from a three star restaurant. The service was very attentive and welcoming. I did end up preferring my first visit in which I tried the seasonal menu. The kangaroo tartar and their take on the quintessential Australian surf and turf were superb. The carrot lamb (pic 16) from the classic menu subverts expectations in a way I hadn’t experienced before and truly showcases Smyth’s genius.

The window view is really gorgeous. Especially at night.

I was there with a friend last year and we both got the seasonal menu and asked if we could also add the core apple dessert. They very kindly gave both of us the additional dessert without charge.

Well this one certainly wins in terms of the view you get.

Given the relatively weak AUD at the moment, it would be £190/$260 for the more expensive tasting menu, which is not bad if the food is as good as/close to the original Core.
