I have a five pound flat. How long should I let it go for?

  1. Don’t worry about time. Cook till 195-200 internal temp and then let rest an hour

    Flats are tough. Cook to temp, not time. I usually wrap a packer in pink butcher paper…I’d probably wrap this in foil with some beef broth to keep it moist.
