Should I cut off those leaves growing from the ground?
So I read here that it is not good for the leaves when they touch the ground. I did not know it before and I plant those peppers apparently too low (2-3 weeks ago). What should I do?

I would strip them. While I’ve moved into not pruning early flowers or anything of the sort, the lower growth I usually remove a since it often gets shaded by the canopy and can produce inferior fruit, consuming resource which could be better spent by the plant on the canopy. In your case I’d strip the bottom leaves to leave clean stem at the base of the plant
