An avid cook with a lack of experience in mexican cooking. I recently took a trip to CDMX and absolutely fell in love with the complex and diverse flavors of Mexican cooking.
Fast forward to last weekend, I labored around 6 hours over trying to make a authentic mole. Luckily I live right next to a Mexican market so finding ingredients was easy.
Ended up pouring it over some tacos (fried and cooked in lard / mole combo) and it truly turned out as one of my favorite dishes ever. So much attention and love is required and tasting each individual part of the recipe truly blew me away.
Had to plate it to honor our recent trip along with discovering the amazing cooking music of Jose Jose.
