My butcher advertises these as “locally raised, ungraded Wagyu.” I have my doubts but they are still great and a fraction of what real Wagyu sells for $39.99/lb.

    Looks damn good to me. Only thing I can think of is to improve you method of searing and your in there like swimwear! I’d 10/10 smash those if they came out in a restaurant… great job!

  12. Crust looks a little weak and too much band. I’m not sure how it’s both grey banded while also not having a full crisp on the outside. I’d eat this, but it’s not the best cook.
