Dry brined, chili oiled, cracked pepper rubbed, then brushed with a rosemary sprig (yeah I’m serious). Chargrilled and then smoked until thicc spot was 115ish. I kept placing the sprig on top while I seared it and while I smoked it. It actually worked. Lots of rosemary aromatics. The guses were just EVOO and SPG; chargrilled while the skirt rested. Was very good.

    Skirts are by far my favorite cuts to grill. I do mine like yours, chargrilled/hot and fast. You should make those pics into a collage and frame it. Thats art buddy 🤣🫡

    YES! The wife and I do too! We miss the days when it wouldn’t take a HELOC to buy a ton of skirts and have a bunch of people over!

    Skirt steak is the single best cut of meat you can have. I’ve had almost every type of cut and quality of steak and you can’t change my mind.
