Broil until blistered:
3 Romas (260g)
2 Serranos (24g/18g after seeding)
1 Anaheim (75g) seeded
25g white onion

Toast in vegetable oil:
1 dried ancho (5g seeded)
2 dried guajillo (2g seeded)
3 cloves garlic (15g unpeeled)

Let everything cool a bit, peel the garlic and blend it all with:
Small can green El Pato
20g cilantro
Lots of salt
Juice of 2 small limes
1.5 tsp MSG

I drizzled in the oil from the chiles and garlic (probably a scant 1/4 cup) while the food processor was running. Delish. A little kick but not super spicy. I’d increase the chiles next time, but I’m not sure which ones. Maybe bump up the garlic too.

    Looks great. So you didn’t rehydrate the chillies? Just toasted them in oil dry?
