Ok yall – creamy lemon pesto pasta!!!

Sautee whole bag of spinach
Sautee some other veggie for filling ur bowl (i did asparagus & mushroom)
Throw all spinach, whole pack of silken tofu, half cup cottage cheese in a blender. I added in some asparagus too. Add generous amounts of lemon juice, salt, pepper, and garlic to taste. Optional red pepper flakes. I also added some pasta watet too, it was too thick.
Blend!!
Put on whatever u want: i did low carb pasta, shrimp, & filled my bowl w the sauteed asparagus & mushroom

Going to use leftover pesto throughout the week on whatever else i cook 🤗

Cals / macros on slides 2&3 are for the PESTO ONLY – but for the entire batch (probably yielded 5ish cups of pesto). I don’t have cals / macros for my bowl.
