My recent holiday to Greece inspired me to new efforts to stick to a Mediterranean diet, so here’s one day of eating inspired by the Greek kitchen. Love to hear your comments or changes you would make!

Breakfast: Zucchini-spinach fritters with halloumi baked in olive oil (meal prep friendly!) and mayonaise/chili dip
Lunch: Greek salad (tomatoes, cucumber, red onion and peppers) with olives, wild rice, feta and olive oil
Snack: Whole wheat bread with almond paste and strawberries
Dinner: Moussaka with minced chicken, eggplant and potatoes (not pictured)
Snack: Greek yoghurt with chia seeds and sugar free crunchy muesli
