Dolma (Turkish for “stuffed”) is a family of stuffed dishes associated with Turkish or Ottoman cuisine, typically made by stuffing rice, minced meat, veal, seafood, fruit, or any combination of these inside a vegetable or leaf wrapper. Wrapped dolma is specifically known as sarme, which is made by twisting grapes, cabbage, or other leaves around the filling. Dolma can be served hot or at room temperature, and is common in the modern cuisine of regions and countries that were once part of the Ottoman Empire.
