Just winged this to be honest. It took about 40 mins. It's really tasty.

  • Have some pearl barley cooking in a rice cooker or on the stove.

  • Chop 1 onion, zucchini and carrot. Pan fry in OO until softened. Add 2 minced garlic gloves and 1tbsp tomato paste. Stir for a min. Add 1/2 cup of veg stock and 1 tin of tomatoes (I blitzed my tomatoes in the tin to make it a passata texture). Simmer for a few mins.

  • Add 1- 2 tbsp Italian herbs. Add chilli flakes if you want. Add another cup of stock and the raw seafood (I just used a thawed marinara mixture. You could do just fish, or calamari or whatever.)

  • cook for 10 mins or so, at a good simmer until seafood is almost cooked. Add more stock if it reduces too much.

  • Add black olives and the cooked barley. Taste it and season. I seasoned with pepper, salt, sumac, lemon zest and lemon juice.

  • take off heat and stir through fresh herbs. Et voila

  3. Crazy: I essentially made that exact dish last night. The only exceptions:

    – I just threw steel cut oats in with the simmer. I like it with some tooth.
    – veg was asparagus & brussel sprouts
    – cod, shrimp & calamari
    – everything started with trying to think of something to make in order to use up a half jar of Rao’s marinara

    It was excellent.
