Years back I learned how to make pancakes out of 1 banana and 2 eggs. This recipe triggered a power trip from whence I mixed eggs with everything and turned them into pancakes. And by "everything" I mean I made sweet potato pancakes and tuna pancakes because I didn't really eat much else at the time. Eventually, canned salmon pancakes became a staple to stop me from eating 5 cans of tuna a week. Mercury or something.
Today, about six years since I last cooked this, I was desperate to not eat spicy cottage cheese for the 69th time in a row. I decided to finally put to use some old canned salmon i had in the pantry. I bought it a year ago reminiscing this recipe, hoping one day I could make something greater. They didn't come out great tbh. I put old bay in them and it was too salty. Pepper is more my style; I don't really like salt unless it's on nuts or in things made from nuts. I also did not cook the peas well enough; they were slightly hard and not as spicy nor pea-flavored as I like. Maybe they've been frozen too long? This dish was 4/10 for me. I'll probably try again and put mustard in it.
Recipe: 1 can salmon, 1 egg, 1 optional tbsp lite mayo (can be swapped for another egg i think?), some small quantity of mince veg like shallot/onion, green pepper, garlic, whathaveyou. Season whatever. Make sure the salmon is mashed up good.
I wonder if I can put pesto in this.

Canned Salmon, Eggs, Lemon, Dill, Red Onion, a little Mayo, and Smoked Paprika. Pinch of cayenne for kick.

I haven’t had that forever, my mom used to make those. I really liked the flavor but I was never much of a fan of the bones in the canned salmon

We ate these a bunch growing up and I’ve been wanting to make them again! I always put hot sauce on them as a kid (Frank’s never let me down if I didn’t know what else to put on something), and I’ve always wanted to try it with a spicy mayo since that’s how I see pictures of it nowadays.

My family recipe for salmon croquettes:
Can of salmon (I debone and de-skin)
One egg
Salt and pepper
Optional: half a sleeve of crushed crackers to extend
Mix together. Form patties. Roll in cornmeal. Shallow fry.
Serve with ketchup for dipping. Side of peas, side of mashed potatoes.
My grandma made them with those sides, so my mom did, so I do. My husband hates peas, but still expects three peas on his plate bc that’s tradition. 😂
