After some inspiration from daywithmei on Instagram I made a salad with sliced fennel, green apple, radishes, dill and croutons topped with dill and a dressing made from the Fangst marinade. It did not disappoint. A glass of Albariño was the cherry on top.

(The mussels almost didn’t make it til dinner because I kept snacking on them on chive/dill chips along with some creme fraiche and the sliced fennel. Absolute god tier snack).
