These are still green but getting big. Back home we used to eat them green sometimes too.

I tried one today and it was pretty spicy. I want to wait for them to turn red so I can use them in a hotsauce.

I noticed the tops are looking bubbly so I just want to make sure it's okay to let them keep growing and turning red.

    I’m not a fan of green cayennes. Much more vegetal in flavor than a green bell, jalapeno, or poblano.

    If you want to use them in a hot sauce, let them become red, because it will have a more complex flavor

  3. It’s a matter of preference.
    You can pick them green orange yellow or red, all stages taste different and so it’s a clear case of what you like most or what you would like to use them for which is the same thing in principle

  4. For all of our peppers we wait until they turn color

    some will even dry on the plant – they are thin walled
