Been trying to branch out from my usual ribs and pulled pork. Used the ‘sweet rub’ recipe from hey grill hey and smoked them around 325 until they hit 155 then sauced them with some kinders honey hot and ran them up to around 170. Smoked with hickory on my WSM.

Next time let them get up to 185-190 internal temp.
Dark meat on poultry is best cooked a little bit hotter, it has more connective tissue that needs more time to break down some more.
I’ve seen some impressive thighs in my life.. But I’ll take these any day. Looks delicious!
How do you get your WSM up that high? Mine seems to top off at 275.
