i meant to start recording this from the beginning but that didn’t work out But I am about to show you how to make the best Greek potatoes ever I peeled my potatoes and I sliced them into wedges Just regular rusted potatoes I’m putting on on them in the pan Greek seasoning salt pepper and some oregano Wrong side This is where the liquid gold comes Okay this mixture which I didn’t it wasn’t recording I made it and it wasn’t recording So I do 3/4 cup of chicken stock 3/4 cup of olive oil as many cloves of garlic as you want the juice of two lemons and then oregano in the mix And you pour it all over your potatoes So the trick to this is that we’re actually brazing the potatoes before we bake them and get them crispy They’re going to cook in this liquid for as long as you can It’s why you want to use russetss because they can cook longer longer cook time and you want them to get nice and soft I need to cut that one Whoops There we go That’s better Now what I’m actually going to do so my friend Nichollet’s coming over tonight and we’re having Greek night and it is currently 9:30 in the morning I’m going to let these sit in this liquid all day All day And then later I’m going to pop them in the oven with some foil over the top for about 40 minutes And then I’ll show you the rest I have the oven set at 390 So those are going to braze in the brazing liquid for about 30 to 40 minutes at 390 The potatoes were marinating in the fridge all day And I went ahead and put them in the oven covered in foil The whole house already smells like lemon and garlic and oregano Once they are fork tender and soft you’re going to lay them out in a single layer on baking sheets And you’re also going to put the liquid back in to reduce I left these in for about another 40 minutes but to your discretion until they’re brown enough or crispy enough for you And this was the finished product Now they’re crispy on the outside soft and fluffy on the inside Finished them off with that reduced brazing liquid Oh my god they’re freaking amazing I also used the liquid on our chicken And this was our spread Greek salad homemade taziki our chicken skewers and our crispy lemon potatoes So crunchy
