Levain: 38g starter, 57g bread flour, 38g whole wheat, 118g water.

Autolyse: 343g bread flour, 37g whole wheat, 25g rye, 246g water.

The day kind of got away from me so the timing for everything was way off from what I intended.

450F for 30 mins in a Dutch oven with the top on and then 20 mins without.
