Bellows Bistro in Chaska offers a unique mix of hearty meals and gaming experiences.

CHASKA, Minn. — A new restaurant in the southwest metro promises great food and adventure. The Bellows Bistro in Chaska mixes casual dining and gaming. 

The owner, Robert Cormican, opened the restaurant next door to his popular role-playing and board game store inside the Chaska Commons. 

The Forge specializes in tabletop games such as Dungeons & Dragons, Warhammer and Magic: The Gathering. 

Cormican wanted to combine his love of food with his passion for gaming. 

“Inspired by the roaring hearths of medieval taverns and the daring spirit of tabletop quests, our menu blends hearty, fire-kissed meals with mystical drinks and legendary treats,” states their website.

Cormican joined KARE 11 Saturday to share the restaurant’s signature dish.


RECIPE: Bellows Bistro Hand Pies

1 Pound of Ground Beef1 Large white Onion½ Pound of Potatoes4 tablespoons (1/2 stick) unsalted butter1/4 cup all-purpose flour1 cup chicken stock½ cup heavy cream1 Tsp Salt 1 Tsp Pepper

Brown 1 pound of ground beef.

Caramelize 1 large onion.

Boil ½ pound of potatoes.

Cut potatoes into 1-inch x 1inch

Make a roux with your butter and flour.

Add chicken stock and heavy cream.

Put all ingredients together.

4 Tbs of unsalted butter½ cup chopped onion½ cup chopped mushrooms2 cups chopped fresh spinach½ cup chopped artichokes¼ cup chopped sun-dried tomatoes2 teaspoon thymeto taste salt and pepper1 cup heavy cream6 Tbs gruyere cheese, shredded

Saute ½ cup chopped onion in 4 Tbs unsalted butter and 4 tbs olive oil over medium-high heat until translucent.

Add ½ cup chopped mushrooms and cook until soft.

Turn the heat down to medium. Add 2 cups chopped spinach, ½ cup chopped artichokes, ¼ cup chopped sun-dried tomatoes, 2 teaspoons thyme, and salt and pepper, and cook for a few minutes stirring frequently.

Add 1 cup of heavy cream and simmer for 3-5 minutes.

Remove from heat and stir in the gruyere cheese.
