Snagged same day reservations for my wife's birthday and we ended up having one of if not the best meals of our lives. We've done 11 Madison, Per Se, Ko, and Huso was right up there if not better. Afterwards I saw that people were saying that things were salty but we didn't find that at all. Pretty much as close to perfect as it comes. I wouldn't be surprised if Huso ends up with 3 stars.
Course 1 a fun play on bagel with lox.
Course 2 the trout roe popped and I'm a sucker for edible flowers.
Course 3 a play on French onion soup and I could drink the consume by the bottle.
Course 4 the potatoes were done 4 ways, if you didn't enough caviar they needed a touch of salt.
Course 5 the foie gras was in a butter ball, we forgot to take a picture before digging in, it was incredible.
Course 6 the blood orange sauce on the tuna was terrific, honestly all of the sauces are different and perfect. Probably my favorite course.
Course 7 apparently I've been going over on all of my scallops because this one was under what I usually do and it was better.
Course 8 the duck was perfectly fatty and tender and the bacon sauce really made it. The rhubarb in the top right was the stand out.
Course 9 a lamb Wellington with a wonderful asparagus.
Course 10 Apricot with yogurt, I could start every day with this and I don't particularly like apricot.
Course 11 Strawberries on strawberries with a white chocolate shell that was deceivingly thick
Course 12 Petits fours with the standout being the dark chocolate with the caviar.

Nice review and photos. Went here for lunch once myself and enjoyed it (and were lucky enough to meet and chat with chef B). Need to get back for dinner as it looks fantastic.
You really only needed to post it once, though.
Huso has been open for a few years, but it seems like I’ve seen them be mentioned on this sub a lot more recently. Did something change? I seem to remember they had an a la carte, but it seems like only tasting menu now. Haven’t been but definitely curious.
What is so different recently that a venue opened for years and never received a star would suddenly be awarded two?
