The limited edition elegantly combines two Italian culinary traditions, resulting in a rich holiday cake laced with a sweet, balsamic cream filling made using Carandini’s signature Emilio Balsamic Vinegar of Modena PGI.
Nestled in the Italian province of Veneto, Olivieri 1882 is a 6th generation bakery, famous for their leavened holiday cakes — panettone in particular. Pastry chef Nicola Olivieri uses a 130-year-old family recipe to create a panettone with no preservatives and only the finest hand-selected raw ingredients (Australian 5 crown sultanas, candied oranges made in-house, Tahiti Bourbon vanilla beans, Italian wheat flours, raw cane sugar, Belgian centrifuged butter, and Italian acacia honey). A four-day production process, two of which are dedicated to its natural fermentation, results in a rich yet soft panettone, thanks to long-rising techniques.
Similarly located in Northern Italy, Carandini, one of Modena’s oldest families, has been producing hand-crafted balsamic vinegars using traditional family methods since 1641. Their hero expression, the Emilio Balsamic Vinegar of Modena PGI, is a premium, high-density vinegar that contains 60% grape must and strikes a delicate balance between sweet and sour.
