Recently had dinner at Iris, the restaurant on a floating art installation in the middle of a fjord that you get to by boat. But first, the captain takes you to the chef’s nearby home for a few bites — including fish cheek and a “cone of plenty,” which translates to “a crispy bouquet of Sweet Allysum, Jasmin blossom and gooseberries, dusted off with a vinaigrette made of sorrel and Hardanger apples.”
For an experience, I’ve never had a cooler meal. The food was great, too, except I hated a dish called “trash or treasure” (scallop offcuts, horseradish, squid ink & lemon rind) that was in the form of a QR code. It felt like a stupid gimmick but I also thought the flavors were too bitter. Otherwise: An outstanding meal although I don’t feel great about their relationship to the fish farm. (Then again, there’s a lot of ugliness in all farming.)
If you go, do the juice or hybrid pairing. We also went to Noma and thought their non-alcoholic pairing was kind of bleh. This place had an incredible NA pairing with unique flavorful drinks.

In all seriousness, food looks very interesting. View is unbeatable.
I sadly had to cut this restaurant from our Scandinavia itinerary in order to accommodate more time in Copenhagen. Looks like I will have missed out.
